Mint Carrot Pulao Rice

This is my own recipe of Mint Carrot Pulao!
Mint is a fragrant herb Used in Indian cuisine in different ways. This simple and easy mint pulao has mint leaves and grated carrots.
You are going to love this bright and fresh mint pulao! It’s aromatic, flavorful with mint and carrots.
Simply delicious and flavor-packed rice that I usually end up eating on its own or with Cucumber Raita and Onion Raita.

2 cup Basmati Rice
2 inch ginger
3 clove
2 star anise
3 cardamom pods
Few bay leaf
1 tbsp ghee
2 tsp salt

2 Green Chilli
4 clove garlic
1/2 inch ginger
2 shallot
6 almonds
1 1/2 cup mint leaves
1 tbsp grated coconut

4 tbsp ghee
2 bay leafs
1 inch cinnamon sticks
3 clove
3 cardamom pods
2 star anise
1 tsp fennel seeds
1 tsp black peppercorns
10 cashew nuts
1 big onion ( slice )
2 tomatoes
1 tsp garam masala
2 tsp salt

1 cup grated carrot
Chopped coriander
Fried onion ( I’m using fresh fried onion from @MAMALYNN.KITCHEN ( +601110059032 )


2 cawan beras Basmati ( Beras mana pun boleh )
2 inci halia
3 bunga cengkih
2 bunga lawang
3 biji buah pelaga
Sedikit daun salam
1 sudu besar ghee
2 sudu kecil garam

2 Cili Hijau
4 ulas bawang putih
1/2 inci halia
2 biji bawang merah kecil
6 biji badam
1 1/2 cawan daun pudina
1 sudu besar kelapa parut

4 sudu besar ghee
2 helai daun bay
1 inci Kayu manis
3 bunga cengkih
3 biji buah pelaga
2 bunga lawang
1 sudu kecil jintan manis
1 sudu kecil lada hitam
10 biji gajus
1 biji bawang besar (hiris)
2 biji tomato
1 sudu kecil garam masala
2 sudu kecil garam

1 cawan wortel parut
Daun Ketumbar dicincang
