Tender Jackfruit Curry

Ingredients

500gm Young Jackfruit – Cut into 2 inch big
1 tsp salt
1 tsp tumeric powder

Blend
3 shallots (30gm )
6 clove garlic (28gm)
1 inch ginger ( 20gm )
1 tsp fennel seeds
1 tsp cumin seeds
2 inch cinnamon
4 clove
1 star anise
4 cardamom
1 onion ( 70gm ) sliced
1 lemongrass – lightly smashed
1 pandan leafs – knot
3 tbsp meat curry powder
1 1/2 tbsp cili powder
1 tbsp coriander powder
1 tsp garam masala
4 cup water
2 tbsp chopped coriander leafs
1/4 cup grated coconut + 1/4 water

500gm Nangka Muda – Potong 2 inci besar
1 sdt garam
1 sdt serbuk kunyit

Kisar
3 biji bawang merah (30gm)
6 ulas bawang putih (28gm)
1 inci Halia (20gm)
1 tsp jintan putih
1 tsp jintan manis
2 inci kayu manis
4 bunga cengkih
1 bunga lawang
4 biji buah pelaga
1 biji bawang besar (70gm) dihiris
1 serai – dititik
1 helai daun pandan – disimpul
3 sudu besar serbuk kari daging
1 sudu besar serbuk cili
1 sudu besar serbuk ketumbar
1 sudu kecil garam masala
4 cawan air
2 sudu besar daun ketumbar cincang
1/4 cawan kelapa parut + 1/4 air
